Mustard greens have a set lifespan. After some time it will bolt and start producing seeds. You can delay it from bolting by harvesting the leaves regularly. The great thing about mustard greens is you can easily re-plant from seeds you can harvest from your old plant. 


Your mustard greens plant will start to grow stalks and flower when it starts bolting. Just keep watering it as usual and eventually it will start producing pods. Wait a few weeks until the pods dry and turn brown before harvesting them.

Bolting produces flowers. Bees love them!

Dried pods mean you can harvest the seeds already.
